Mom's French Toast

Image
My mother makes the best french toast in the world.  I'm not just saying that because she's my mother.  It is so good! I have been trying to crack her recipe for years.  She doesn't keep her recipe a secret, she just doesn't measure her ingredients.  That makes it extremely hard to replicate her recipe.  Every time I ask her how to make it, she tells me to just throw in milk, eggs, cinnamon and sugar.  When I ask how much of these things to put, she always says, "just eyeball it". So, after years of experimenting with this one, I think I have finally figured it out. Ingredients: 2 eggs 12 slices of bread 3/4 cup of milk 1/2 cup sugar cinnamon butter (for the skillet, about 1/4 cup needed) Crack the two eggs into the container.  It works best if you use a square container to do this because the bread fits in it better.  I actually use one of my mother's Tupperware dishes that I never returned.  :)  It's perfect ...

Buttermilk Pancakes

Image
What do you do with your leftover buttermilk?  Well, you can always make buttermilk pancakes.  For this, I used the same recipe as the pancake recipe used here . The only difference in this recipe and the other is in this one I increased the amount of buttermilk used because buttermilk tends to have a thicker consistency.  Because the of the difference in the consistency, the batter seemed a bit drier than necessary.  So, three cups of buttermilk worked out well. Below I listed the ingredients again for convenience.  And of course, these pancakes were made on my trusty griddle.  Gosh, I really love that griddle! Ingredients: 3 cups flour 2 tablespoons sugar 7 teaspoons baking powder 1 teaspoon salt 1/2 teaspoon vanilla extract 3 cups buttermilk 2 eggs

Open Omelet

Image
Growing up, whenever my mother asked me if I wanted an omelet, I knew this is what she meant.  She never made the kind that were folded over and stuffed with cheese.  She always made them open.  I still enjoy eating these from time to time.  They are a quick and easy breakfast option for busy mornings. Crack two eggs and season them with cayenne pepper, salt and pepper to taste. Then, chop Canadian bacon or ham or bacon.  Pretty much whatever you would like is fine.  Instead of meat, you can substitute shrimp or veggies. Pour the whisked eggs into a skillet.  I usually spray my skillet with Crisco cooking spray, but you can use butter also.  Throw in the meat or whatever toppings you choose. Scramble the mixture and you are done.

Biscuit Beignets

Happy Monday!  Okay, so maybe it's not necessarily a "happy" Monday for you, but it's here.  Let's make the best of it.  What better way to make today great than starting it with beignets?  They are pieces of fried bread covered in powdered sugar and they are awesome. You can make them from scratch, but there is also an easier way to make them.  I learned this method at an after school program I attended in elementary school.  I'm not quite sure where the recipe originated, but I used to beg my mother to let me try it at home. Simply start with a can of refrigerated biscuits, powdered sugar and cooking oil. Cut the biscuits in half.  While you are doing that, begin heating the oil.  You can use a Fry Daddy, if you have one, otherwise, you can fry these in a pan.  Fill the pan or fryer with the appropriate amount of oil and allow it to heat. Drop the halves into the hot oil.  Allow to fry for ...

Pancakes

Image
Here is a recipe I have been using for a few years.  It makes a pretty large batch of pancakes.  We usually eat what we want right after I make them.  The leftovers I put in a Ziploc bag to reheat throughout the week for breakfast, they reheat well.  Ingredients: 3 cups flour 2 tablespoons sugar 7 teaspoons baking powder 1 teaspoon salt 1/2 teaspoon vanilla extract 2 1/2 cups milk 2 eggs First, combine all dry ingredients in a mixing bowl.  I prefer to use this bowl with a handle and spout, it makes pour the pancakes onto the griddle much easier. Add the vanilla extract, milk and eggs to the mixture and mix. When the ingredients are smooth in texture, they are ready to be poured on the griddle.  Pour them on the griddle, providing at least a one inch space between each.  When the top of the pancakes start to look bubbly, they are ready to be flipped over.  This is a trick my cousin taught me tha...

Cinnamon Toast Breakfast

Image
I am not sure of the original origin of this recipe.  This is a quick and easy breakfast I have been making since I was a kid.  My childhood neighbor showed it to me one summer morning while she was babysitting her younger brother and me.  First, to make the cinnamon and sugar mixture, simply fill a container (I used a glass bottle) about halfway with sugar, pour a layer of cinnamon, shake the container, add a little more sugar to fill the container and shake again to mix.  Like this: Now toast bread in the toaster.  Put butter on the toast.  I do this by rubbing the butter directly on the toast.  When the toast is warm, it mealts the butter instantly. Once the toast is covered with butter, sprinkle the cinnamon and sugar mix on the bread.  It does not take a lot of the mix to get the desired taste.  If you use a resealable container for your cinnamon and sugar, you can save the rest for later. Now you have breakfast in a...
