Slow Cooker Pork Chops and Gravy

Image
Mr. C loves gravy and rice.  I'm not big on it, but he likes a good meal of meat and rice.  So, every now and then, I cook it.  Since our schedules are so crazy, we try to use our slow cooker as much as possible.  I figured out a way to make pork chops and gravy in the slow cooker.  This recipe seems to be a hit so far with Mr. C and the Little Mister.  And, it's pretty easy to throw together, too. Here's what you will need to start: Pork chops (I used about 8) Worcestershire sauce 1 brown gravy packet 1 packet of dry onion soup mix 1 can of cream of mushroom soup 1 can of chicken broth Lay the pork chops in the bottom of the slow cooker. Pour on some Worcestershire sauce the pork chops.  I did not measure how much I poured on, just kind of sprinkled some all over the meat.  If I had to guess, I'd say I used about 1/4 of a cup of it. Add the cream of mushroom soup to the pot. Sprinkle the packet of dry onion s...

Spice-Crusted Pork Tenderloin

Image
I am always looking for quick and easy dinner solutions.  This is especially true now that I am a working mother and wife.  By the time I get home from work, I am rushing to find something quick to fix for dinner. When I was on Weight Watchers, I found a Spice-Crusted Roast Pork Tenderloin recipe.  This was a low point recipe (3 PointsPlus points) that was beyond easy to prepare.  I have made some modifications to this recipe by adding paprika, onion powder, black pepper and cayenne pepper to the rub, and turned it into a slow cooker recipe.  The original recipe called for the tenderloin being cooked in the oven at 450 degrees for about 26 minutes. Ingredients: 1 pork tenderloin Spice Rub Ingredients: 2 1/2 tsp kosher salt 2 tsp granulated garlic 2 tsp dried oregano 2 tsp dried thyme 2 tsp ground cumin 2 tsp paprika 1 tsp onion powder 1 tsp black pepper 1/2 tsp cayenne pepper Combine all of the spices in a bowl to create th...

Easiest Roast Recipe Ever

Image
This method for cooking roast is awesome.  I'm sure you have figured out by now that I am a big fan of cooking in slow cookers.  There's nothing better than coming home from work to dinner already prepared. I like using these slow cooker liners.  They make cleaning up so easy.   Usually you can find them on the same aisle as the oven bags.   I've mentioned here before the miracle ingredient, onion soup mix packets.  I use them to prepare potatoes in the oven.  I also use them to make my roasts in the slow cooker. Ingredients: Roast (beef or pork) 1 packet onion soup mix 1 can cream of mushroom soup carrots potatoes (optional since this dish is served over rice) mushrooms First, slice the mushrooms, carrots, and quarter the potatoes.  Throw them in the bag with the roast.  This recipe can be used for either beef or pork roasts. Add the packet of onion soup mix. Then, add the cream of mushroom s...

Slow Cooker Shrimp Fajitas

Image
I wanted a way to make shrimp fajitas in the slow cooker.  With a little experimentation, I think I've figured it out.  This version proved to be quite tasty. Ingredients: 2 lbs shrimp 1 large onion 1 red bell pepper 1 yellow bell pepper 1 green bell pepper 2 tablespoons cumin salt pepper First, slice an onion, red, yellow and green bell peppers. Throw them all into the slow cooker. Add the shrimp to the slow cooker also.  Season with two tablespoons of cumin and salt and pepper to taste.  Cook on low for two and a half hours.  This is a great recipe if you have a slow cooker with a timer.
