Chicken Parmesan

This is one of the first meals I ever cooked for my husband years ago.  Back then, I used to bread the chicken, first dipping it in an egg wash and then coating it with bread crumbs.  Rather than cooking the chicken breasts in a skillet, I would bake them in a baking dish. Now, since I am counting calories, I try to do whatever possible to cut down on some of the calories.  So, instead of breading the chicken, I grill it without any breading.  I feel like I'm getting a bit ahead of myself here.  Let me start at the beginning with the ingredients. Ingredients: 6 or 8 Chicken breast, thinly sliced (depends on how many servings you want out of the dish) Salt Pepper Paprika Cayenne Pepper Garlic Powder Onion Powder 1 Box of Penne pasta (I use the Barilla Protein Plus pasta) 1 Jar of spaghetti sauce of your choice (I like to use the Prego Traditional or Roasted Garlic sauce) 1 Small bag of Parmesan cheese I always start by washing the chicken in ...

Dijon Lime Baked Chicken

Image
I am always looking for new ways to cook chicken.  I found this recipe on Skinnytaste.com.  Gina's original recipe can be found here .  Her recipe is an adaptation of a Paula Deen Recipe. I have modified it a bit removing the mayonnaise from the list of ingredients.  Mr. C is not a fan of mayo and although I like it, I figured the dish would be healthier if I omitted it. Ingredients: Small chicken thighs with skin removed (Use 6 to 8) 3 tbsp Dijon mustard 1 crushed clove garlic 1 lime, use the lime zest from the lime and squeeze the juice from that lime 3/4 tsp pepper salt dried parsley flakes Preheat the oven to 400 degrees.  If the skin has not already been removed from the chicken, remove it and wash the chicken.  Place the chicken in a glass pan. In a small dish, mix the Dijon mustard, lime juice and lime zest together. Season the chicken with pepper, salt and parsley flakes.  Then pour the mustard and lime mixture ov...

Chicken Parmesan Casserole

Chicken Parmesan is one of my favorite dishes.  This casserole is easy to make and is the first meal I cooked for my husband when we were dating.  He liked it then, and he still loves it now.  Every now and then I break this one out for him. Ingredients: 1 box of panko breadcrumbs 2 jars of marinara sauce 6 chicken breasts 1 large egg pasta (penne, bowtie or mostaccioli) 1/4 cup of butter Start by boiling the pasta.  While doing that begin pounding the chicken to thin the breasts.  You want to do this so they cook faster.   Then create an egg wash by cracking the egg into a bowl, and mixing it up.  In a separate bowl, put the panko bread crumbs.  Set aside. After all of the chicken breasts have been pounded, dip each in the egg wash, covering on both sides. Also, coat both sides in the panko breadcrumbs.  Then place in a buttered skillet and pan sear both sides.  Don't worry if the chicken does not cook all the ...
